Sesame Noodles & Oriental Peanut SauceSesame Noodles & Oriental Peanut Sauce
Featuring sesame seed oil, peanut butter, fresh ginger root, green onions, and crushed red pepper, this tasty Asian inspired recipe is by artist Terri Olson, as published in the Amado Territory Ranch Cookbook.

1 pound thin spaghetti
3 Tbsp. dark sesame oil
3 large garlic cloves
4 green onions cut in ½ inch pieces
1 inch piece ginger root, pared and quartered
1/3 cup chunky peanut butter
¼ cup soy sauce
¼ cup chicken broth
1 Tbsp. rice vinegar
1 Tbsp. salad oil
2 tsp. sugar
½ to 1 crushed red pepper
1 cup julienne cucumber

Cook spaghetti, drain and rinse with cold water. Toss with 2 Tablespoons sesame oil and refrigerate.
In food processor, finely chop green onions and ginger.
Add remaining sesame seed oil and all remaining ingredients except cucumber.
Process until thoroughly mixed. Toss with chilled spaghetti and surround with cucumber.
6 to 8 servings.
