 From Frittatas to French Toast....3 Fabulous Recipes Perfect for a Spring Brunch

Blue Heron Farm Frittata - Serves 6
This savory recipe is a favorite of Andrea Peterson, Innkeeper of Blue Heron Farm Bed & Breakfast in Fallbrook, CA. Located on 20 beautiful rolling acres devoted to the organic farming of Pio Specialty Produce which produces 20 varieties of lettuce, strawberries, and raspberries. Guests are treated to scrumptious gourmet breakfasts, fabulous bird-watching, relaxation and great comfort.

INGREDIENTS:
Olive Oil
1 cup chopped onion
1/2 sliced onion
1/4 cup shredded Romano or Parmesan cheese
1 cup chopped summer squash or favorite veggie
4 eggs
1/4 cup milk
1/2 cup shredded Gooyer cheese

METHOD: Saute chopped onion and summer squash or favorite vegetable. Mix eggs and milk together, and then pour over the sauteed vegetables. Add Gouyere cheese. Top the mixture with onion slices, and sprinkled Romano or Parmesan cheese. Cook on low heat on stove top until mixture sets. Broil in oven to brown and set the top.

Amaretto French Toast - Serves 3

Try some delicious French toast over the Easter Holidays. This recipe is from Teresa Johnson of Alpine Bread Basket Restaurant & Bakery, in Alpine, San Diego CA. Their sweet breads make great French Toast, you can top them with your favorite jam, fresh fruit, nuts, and whipped cream. INGREDIENTS:
6 1 inch thick slices of Teresa’s
Cinnamon Nut Bread or Teresa’s Cinnamon Swirl Bread
4 large eggs
½ cup milk
1 tablespoon dark brown sugar
1 teaspoon almond extract
2 tablespoons amaretto (optional)
3 tablespoons butter
¼ cup sliced almonds, toasted
powdered sugar
Maple Syrup, warmed

METHOD: Arrange bread slices in a lightly greased 13x9 inch baking dish. Whisk together eggs, next 4 ingredients, and, if desired, liqueur - pour over bread. Let stand 3 minutes, you can puncture the bread with a fork so it will absorb more liquid if you want to cook it immediately; then gently turn bread over in pan to evenly absorb egg mixture. Chill 8 hours, if desired. Melt butter or spray with cooking spray in a heavy skilled over medium heat; put soaked bread slices in pan and cook ‘til golden brown then turn and cook the other side. Check center with a knife to ensure it is cooked all the way through. Slice toast diagonally, place on a plate, sprinkle with powdered sugar and toasted almonds. Serve with syrup and soft butter.

Jerri’s ‘Kiss of the Gods’ Frittata - Serves 6

Bursting with the flavors of the southwest, this tasty dish makes a great entree for a weekend brunch. Enjoy with a Bloody Mary, mimosa, fresh fruit margarita, coffee or orange juice. This recipe is shared with us by Innkeeper Jerri Hagman of Homestead Inn Bed & Breakfast in Twentynine Palms, California - a fabulous desert getaway that’s home to Joshua Tree National Park and the gateway to the Mojave National Preserve. INGREDIENTS:
1/2 tomato
1/2 green bell pepper
1/2 red bell pepper
1/2 onion
2 jalapeno peppers or green chiles
1/2 cup shredded sharp cheddar cheese
1 1/2 dozen eggs
1 pint sour cream
1 avocado (optional)
1 stalk of celery
6 large white mushrooms
6 flour tortillas (taco size)
1 tsp. pinch of salt
1 tsp. pinch pepper

METHOD: Finely chop and set aside in it’s own pile - the red bell pepper, green bell pepper, celery, onion and tomato. Slice mushrooms and set aside. Whip eggs - 3 at a time setting each batch aside in it’s own separate container. Warm tortillas in microwave for 12 seconds. Place each tortilla into it’s own tortilla baking dish, and shape it into the dish’s mold. Pour each batch of whipped eggs into each tortilla. Add the variety of chopped ingredients peppers, onion, tomato, celery and mushroom slices. Sprinkle each tortilla with salt and pepper, and cover with shredded cheese. Bake in the oven at about 350’, for about 15 minutes or until the egg has set. (Shake the oven grill to see if egg has set in it’s form.) When ready take tortillas out of oven and set aside to cool. Take the tortillas out of their dishes. Top the frittata with a dollop of salsa and sour cream, and serve on a plate garnished with jalapeño peppers, and fresh slices of avocado and melon.
