Basic Salad Dressing      Apple Salad
Yuma - Lettuce Capital of the World Salad

Basic Salad Dressing
Baby lettuce is tender so you don't want to dress it until the last moment. It can be mixed with other greens, fruits, nuts and cheeses.  Blue cheese or goat cheese are favorites. Recipe by Andrea Peterson of Blue Heron Farm Bed & Breakfast
Basic salad dressing:

1/3 C seasoned rice wine vinegar
2/3 C good first cold pressed olive oil
 Salt to taste

Garlic is a good addition if you aren't using fruit
A classic combination is baby lettuce, arugula, blue cheese, walnuts and
 pears. Arugula changes character when combined with fruit.  It loses most of the bite and is especially delicious.  Any fruit works with it.

Yuma 'Lettuce Capital of the World' Salad - By Tina Clark, Chef and Caterer at St. Paul's Cultural Center - Yuma Az's most romantic and historic Church for Weddings and Receptions.

1 Head Romaine Lettuce - washed, dried, chilled and torn to pieces
2 Cups fresh Spinach - ashed, dried and chilled
1 Ripe Mango - peeled and sliced
1 Red Bell Pepper - sliced
1/2 Cup Cilantro - chopped

1 Cup Croutons - toasted
1/4 Cup Nuts - pecans, walnuts or pine nuts
1/4 Cup Raisins

Dressing:
1/4 Cup Olive Oil
3 Tbsp. Seasoned Rice Vinegar
1 Tbsp. Honey
1 Tbsp. Parmesan Cheese

Toss all ingredients together with dressing. Serve immediately.

Apple Salad -

4 cups fresh baby spinach leaves
1 small head Boston or Bibb lettuce
2 medium apples (granny smith, golden delicious, gala, or fuji)
¼ cup chopped walnuts (candied ones are good)
½ cup plain yogurt
1 tablespoon honey
1/8 teaspoon ground coriander
1/8 teaspoon ground ginger
1/8 teaspoon ground turmeric

Place the spinach and lettuce in a salad bowl. Core and slice the apples.  Add to the lettuce, toss in the walnuts. In a small bowl, blend the yogurt, honey, coriander, ginger, and turmeric.  Toss with the salad.  Serve immediately.  Yield 4 servings.
