Basic Salad

Apple Salad
Yuma - Lettuce
Capital of the World Salad
Baby lettuce is tender so you don't want to
dress it until the last moment. It can be mixed with other greens, fruits,
nuts and cheeses. Blue cheese or goat cheese are favorites. Recipe
by Andrea Peterson of Blue Heron Farm Bed & Breakfast
Basic salad dressing:
1/3 C seasoned rice wine vinegar
2/3 C good first cold pressed olive oil
Salt to taste
Garlic is a good addition if you aren't using fruit
A classic combination is baby lettuce, arugula, blue cheese, walnuts and
pears. Arugula changes character when combined with fruit. It loses most
of the bite and is especially delicious. Any fruit works with it.
Blue Heron Farm Bed &
Breakfast: Tucked into 20 rolling acres devoted to organic
farming, Blue Heron Farm shares the last large expanse of chaparral &
coastal habitat in Southern California. Enjoy tranquility, nature and
bird watching, farm walks, and a delicious hacienda breakfast. Stay
in the spacious Peacock Suite or cheerful Hummingbird Room. Perfect
location for intimate garden weddings and small retreats. Located in
the art village of Fallbrook, CA. (760) 439-6466,
