The Garden Cafe's Southwestern Quiche
The Garden Cafe is a lovely open-aired restaurant in the heart of
Yuma's historic downtown district. Amid the chirping of resident birds,
flowering vines, tucked away among the trees-the atmosphere is as
delightful as their cuisine. Below is the Quiche recipe they use for their
Sunday Brunch, just perfect for special mornings during the holiday
season.
INGREDIENTS:
1 cup flour
1/4 teaspoon salt
1/2 cup shortening
1/4 cup water
vegetable oil spray
2 eggs
1/2 cup whipping cream
1/2 cup half-and-half
1/4 teaspoon pepper
1/2 cup diced canned chilies
1/2 cup sliced black olives
3/4 cup Monterey Jack cheese, shredded
3/4 cup long horn cheese, shredded
METHOD: Combine flour, salt, shortening, and water in bowl. Mix
together and form dough ball. Spray vegetable oil in 9-inch pie pan. Pat
dough into pan and form dough into pan and form into pie shell. In
separate bowl, combine eggs, whipping cream, half-and-half, pepper,
chilies, olives, and cheeses. Mix ingredients well and pour into shell.
Bake in 350 degree oven for 35 to 40 minutes.
