Submitted by Dawn Glass - Inn Keeper of Butterfield Bed and Breakfast in Julian, CA. Butterfield B & B’s Julian Quiche - Serves 5 - 6 1 – 9 or 10 in. pie shell, partially
baked 3 T. butter Preheat oven to 400°F and pre-bake pie shell 7 – 8 minutes. Combine eggs, milk, cream, and ½ T. apple pie spice, may be done a day ahead. Melt butter and add ½ t. apple pie spice and 1 t. sugar. Sauté the apple and raisins for 5 minutes. Pull off heat and drain. Pour the apple, raisin mixture into the par-baked pie shell when it comes out of the oven. Sprinkle the cheese evenly over the top. Pour custard over the apple cheese mixture. Combine 1 t. sugar and ¼ t. apple pie spice and sprinkle evenly over the quiche. Bake at 375°F for 32 – 35 minutes. Remove from oven and let set at least 30 minutes.
