This delicious breakfast appetizer (see pictured to the right) is from
Andrea Peterson, Innkeeper of Blue Heron Farm Bed & Breakfast located in
the rolling farmlands of Fallbrook, California.

Preheat oven to 375 degrees.
Topping:
12 Large Plum Tomatoes
12 Garlic Cloves, peeled.
Salt & Pepper
3 Tbsp. quality Olive Oil
Place on a baking sheet - garlic, and tomatoes cut side up.
Add olive oil, and salt & pepper.
Bake until garlic is soft and tomatoes have released their juices -
about 50-60 minutes. Hold mixture until needed.
Base:
1 Sheet Puff Pastry
1 1/3 grated Gruyere Cheese
2 Tsp. Fresh Thyme
2 Tsp. Fresh Rosemary, minced
1 Egg, lightly beaten with 1 Tsp. water
Line baking sheet with parchment, and place pastry and prick with fork -
leaving about a 1/2" border.
Heat oven to 400 degrees and bake until golden - about 10-20 minutes.
Sprinkle 1/3 cup Gruyere cheese over pastry. Arrange tomatoes leaving
1/2" border.
Place garlic cloves between tomatoes. Sprinkle with thyme, rosemary and
remaining cheese.
Brush border with beaten egg. Bake until risen and golden - about 20-25
minutes. Serve warm or at room temperature.
Cheesy Tomato Broil
This is a super tasty dish that is easy to make.
3 large tomatoes.
1 cup cheese
¼ cup butter or margarine
½ cup soft bread crumbs
Lemon pepper to taste
Salt to taste
Cut tomatoes in half and place them in a shallow baking dish, with the
cut sides up.
Sprinkle salt and pepper to taste. For extra taste, you can also
sprinkle your favorite herbs or spices such as oregano, chili, basil, or
rosemary on top of the tomatoes.
Broil the tomatoes for about 5 minutes. In the meantime, mix the cheese,
butter and bread crumbs together in a dish.
Top each tomato with the cheese mixture and broil for another 3-5
minutes.
Alternatively, add your favorite herbs or spices to the cheese mixture.
Serves 6.

4 medium green tomatoes
½ cup flour
1 tsp. season salt
Pepper
Oil
Slice tomatoes in thin slices. Roll in flour, salt, and pepper.
Drop in very hot oil until done.
