Microwave Lemon-Relished Green Beans Casserole

Easy Green Bean Casserole
1 ½ lbs. green beans
1 ½ cups crushed cornflakes
½ cup grated Monterey Jack cheese
4 oz. cream cheese
1 egg
2 Tbsp. milk
Salt
Tabasco / hot sauce

Clean and cut the green beans into 1 1/2 "pieces.
Steam for about 4 minutes, until they are slightly tender and crisp.
Rinse in cold water and put into a medium casserole dish.
In a blender, mix the egg, milk, cream cheese, a pinch of salt, and a dash of Tabasco or hot sauce.
Mix together - cornflakes, Monterey Jack cheese, and cream cheese mixture. Then spoon the mixture over the green beans as a topping.
Bake at 350 degrees, for about 12 minutes, or until browned.

2 Cups Green Beans, cooked and sliced into 1" pieces
3 Slices Bacon
1 Medium Onion, chopped
1 Can Cream of Mushroom Soup
1/2 Cup Sour Cream
2 Tbsp. Brown Sugar

Fry bacon until crisp. Remove bacon, and sauté onion in bacon drippings. Pour off part of the drippings and add the mushroom soup, sour cream, and brown sugar. Simmer 10 minutes. Add beans, and put in an oven-proof dish and heat together about 20 minutes in a 350 degree oven.

Green Bean Casserole
This green bean casserole is a traditional dish at our house for the holidays.  It is easy to make and very good.  You can use fresh greens beans that are pre-cooked or canned green beans.  If canned green beans are too salty, rinse them first. Recipe by Teresa Johnson.

1 - 8 oz jar cheese whiz
1 - 2 oz jar pimentos
1 - 10½ oz can cream of mushroom soup
2 or 3 tablespoons Worcestershire sauce
½ teaspoon garlic salt (or fresh garlic)
2 cans long green beans or fresh pre-cooked green beans
1 package Pepperidge Farms Dressing Mix

Use a buttered 9x9x3 casserole dish.  Remember to decrease cooking temperature when using glass by 25 degrees.  Mix first four ingredients, pour mixture over green beans, sprinkle the Pepperidge Farms Dressing Mix over the top and bake 350 degrees for thirty minutes until the dressing mix is brown and the casserole is bubbling.

Layered Green Bean Casserole
1 lb. trimmed green beans
4 medium white onions - chopped
2 medium green peppers - chopped
1 cup Parmesan cheese
Salt
Paprika
Butter
Dry bread crumbs

Preheat oven to 350 degrees. In a buttered casserole dish - place a layer of green beans, a layer of onion, a layer of peppers, then another layer of green beans. Put dots of butter on each layer, along with salt and paprika to taste. Repeat the layer process accordingly - always beginning and ending with a layer of green beans. Bake covered for about 1 1/4 hour - until the beans are tender. Before serving, cover the top with dots of butter, Parmesan cheese and dry bread crumbs. Broil for about 5 minutes, or until browned.

Mary's Cream of Tomato Green Bean Casserole
1 lb. green beans
1 cup sharp cheddar cheese
1 can of cream of tomato soup
1/4 cup prepared horseradish
2 tsp. Worcestershire sauce
1/4 tsp. salt
1/4 tsp. paprika
Dry bread crumbs
Butter

Place the green beans (cleaned and trimmed) in a greased casserole dish. Cover with the tomato soup, the horseradish, Worcestershire sauce, salt and paprika. Bake covered for about an hour, until the beans are tender. Then, top with little blobs of butter, the cheddar cheese and bread crumbs. Broil for abut 5 minutes, until the cheese is melted and lightly browned.

Microwave Lemon-Relished Green Beans
This is a different take on your typical green bean casserole, and is from the

1 lb. green beans
1 (8 oz.) can sliced mushrooms, drained
2/3 cup oil
½ tsp lemon rind
1/3 cup lemon juice
¼ cup sweet pickle relish
2 Tbsp. each, finely chopped green onions, green pepper, parsley and pimiento
1 tsp. sugar
1 tsp. salt

Combine green beans, mushrooms and ¼ cup water in large glass casserole.
Microwave on high, for 12-14 minutes, or until green beans are tender-crisp.
Combine remaining ingredients in small bowl, mixing well. Stir into green beans.
Garnish with lemon peel. Serves 4.
